To expedite the process and make the cookies in 1 day, chill the rolled-out cookie dough in the freezer (as opposed to the refrigerator) for 5 to 10 minutes, until the dough is firm and doesn’t indent when poked. Stamp out and bake the cookies as directed. If you find that the cookies are losing their shape in the oven, freeze the subsequent batches of cookie cutouts for an additional 5 to 10 minutes before baking.

Make the dough and stamp out the cookies as directed. Follow the instructions on page 134 to freeze the dough. When ready to bake, position a rack in the center of the oven and preheat the oven to 350°F. Line a half sheet pan (or two, depending on how many cookies you’re making) with parchment paper. Place the cutout cookies at least 11/2 inches apart on the prepared sheet pan(s). Bake one pan at a time (keeping the other in the refrigerator) for 12 minutes, or until the cookies are golden brown around the edges. Cool and serve as directed.
